The Togata is located in Siena Tuscany. It is a small Family Winery with vineyards in the South of Montalcino (Pietrafocaia, Sant’Angelo in Colle and Torrenieri) and wine cellars also in the area of Sant’ Angelo in Colle. The estate is now made up of a splendid nineteenth-century villa, with five floors.
The Togata is owned by the Angel family, a property of women: Stephania, Vanessa and Azzurra. The company is managed by Ms. Jeanneth Angel, having many years of experience in international marketing in the wine world. Every step of production is personally followed with maximum attention and dedication: from the choice of natural products for the care of the vineyards to manual pruning, from the choice of grapes suitable for winemaking to the temperature-controlled fermentation, and also the aging in medium casks of Slavonian oak to give a balance to the wine.. In every aspect thoughtful consideration is given. The goal is not to produce just any wine, but a wine that expresses the love and passion which this small Winery puts in every day to produce it.
Vineyards
The vineyards are older than 20 years and are located at different heights, with exposure to the sun until sunset. The vineyards, extremely healthy, are subject to a double thinning of bunches to improve the exposure to sunlight. During the harvest the average criterion is, in good vintages, three bunches of five. After the grapes are picked, the selection process is continued in the cellar, where they are processed using traditional methods. After being aged in oak barrels, it is then refined in bottles before release. Our primary goal is to produce high quality wines with unique characteristics in body, elegance, and fragrance; quality is given priority the highest priority.
The wine has been kept in caveau since the first year of production in 1990. The cellar, carved in the stone, was built with cutting-edge technology; thermally insulated, it is equipped with a computerized air conditioning system designed to keep the temperature relatively constant, never going over 18 degrees Celsius. The Slavonian oak barrels were acquired from the Firm Garbellotto of Conegliano Veneto, world famous for its professionalism and the quality of its products. The French oak barrels were acquired from Tonellerie Barthomieu.
