Panizzi is recognized as one of the pioneers of the modern renaissance of Vernaccia di San Gimignano. From its early years, the winery has played a key role in redefining the identity and prestige of this historic white wine, focusing on the careful interpretation of terroir and the concept of “cru” as a fundamental element of quality. The estate encompasses four vineyards within the San Gimignano production area—Santa Margherita, Larniano, Montagnana, and Lazzaretto—each characterized by different exposures, altitudes, and soil compositions. These sites allow Vernaccia to express a wide range of nuances, from freshness and minerality to structure and aging potential. In addition, Panizzi owns a fifth vineyard, Pian dei Cerri, located on the slopes of Mount Amiata, where cooler conditions and volcanic influences create an ideal environment for experimentation with both international and aromatic grape varieties. At the heart of Panizzi’s production is Vernaccia di San Gimignano, interpreted through several distinct expressions that emphasize purity, balance, and longevity. Alongside Vernaccia, the estate dedicates equal care to Sangiovese, Cabernet Sauvignon, Merlot, and Pinot Nero, while ongoing trials with Traminer, Semillon, and Sauvignon Blanc reflect a constant search for harmony between tradition and innovation. The vineyards extend over approximately 60 hectares and are farmed according to organic and sustainable principles. No chemical fertilizers, herbicides, or harmful pesticides are used. Instead, Panizzi relies on green manure, organic matter from harvest residues, and properly matured animal manure to preserve soil vitality and biodiversity. Special importance is given to vine age, allowing plants to develop deep root systems that enhance complexity, resilience, and a true expression of place. Vineyard work is carried out with a hands-on approach and limited mechanical intervention, ensuring careful attention to each parcel. Starting with the 2020 vintage, all vineyards and olive groves are fully organically certified, confirming Panizzi’s long-standing commitment to environmental responsibility and authenticity. Today, Panizzi stands as a benchmark producer in San Gimignano, crafting estate-grown wines that reflect the character of their vineyards with precision, elegance, and a deep respect for the land.
